Holiday Recipe Dump

I just posted a butt load of holiday recipes to preserve them for all time! ...or at least until Blogger goes away in the year 2015... Chex Mix - Usually made expressly for snacking on Christmas Day. Rum Cake - Nancy's coveted Rum Cake recipe from the TBM days. Thin Swedish Pancakes - Enjoyed year round at the Burgan household when we were kids. Ginger Cookies - Another Christmas day favorite - especially good dipped in Danish Dessert (found only at Stater Bros?)

Chex Mix Recipe

This recipe differs slightly from the one you will find on the Chex website but I think this one is much better. 1/2 cup butter (one stick) 2 tbsp. Worcestershire sauce 1/2 tsp. Salt Some Onion Powder Some Garlic Powder Tabasco sauce - I use the Habanero version and generously shake it probably 15-20 times.  I've never measured how much actually goes in.  If you like it less spicy, I suppose you could use the regular version or the Chipotle version, but the habanero burn is pretty addicting! In a large bowl (large enough to hold all the mix you're going to make) melt the butter in the microwave until it's nice and melty, but not bubbling out of control. Add the Worcestershire, Tabasco and salt and stir until blended. Add in: 2 cups Wheat Chex 2 cups Rice Chex 2 cups Corn Chex 1 cup salted peanuts (optional for the peanut allergy folks) 1 cup pretzel sticks Mix it all up so the dry stuff is well coated with the buttery goo. Ginger Cookies Recipe

Christmas Ginger Cookies 1 cup sugar 3/4 cup butter 1 egg 4 tbsp. molasses (light) 2 cups flour 2 tsp. baking soda 1 tsp. ground cloves 1 tsp. cinnamon Pinch of salt Mix all ingredients and roll into small balls (about 1"). Place on greased cookie sheet and flatten with a small glass or cookie press first dipped into to granulated sugar (moisten glass to make sugar stick). Bake at 350 degrees for about 10 minutes - watch toward end so they don't burn! Double the recipe to make a cookie jar full...

Thin Swedish Pancakes Recipe

2 Eggs 1/2 Tsp. Salt 2 Tbsp. Sugar 2 cups Milk 1 cup Flour Beat eggs. Add salt, sugar and milk. Beat flour into milk mixture with mixer. Batter will be very thin. Heat griddle and grease with butter. When making pancakes let the batter spread out on the griddle.

Rum Cake Recipe

Cake: 1 box yellow cake mix 1 small pkg French vanilla instant pudding 4 eggs 1/2 cup oil 1/2 cup butter or margarine (melted) 1/2 cup rum Glaze: 1/2 cup butter or margarine (melted) 1 cup sugar 1/4 cup rum 1/4 cup water Combine cake mix and pudding in a large bowl. In a separate bowl, beat eggs, oil, butter and rum. Pour into cake mix and beat until smooth. Pour into greased bundt pan. Bake at 325 degrees for 50 minutes. About 10 minutes before cake is done, combine glaze ingredients in a small sauce pan and bring to a boil. Pour over cake immediately after it comes out of the oven. Let cake cool for 20 minutes and then remove from pan.
